Beetroot Hummus

A vibrant Beetroot Hummus perfect for salads, sandwiches and dips.

Beetroot - 1 whole or about 8 thick slices

Chickpeas - 1 tin drained, keep back2 tbsp of aquafab

Tahini - 1 Tablespoon

Lime Juice for 2 limes


Place all the ingredients in a blender and blender until smooth.  I quite like adding a little finely chopped beetroot afterwards for texture but if you like it smooth just pour into a glass container for keeping in the fridge or into a bowl for serving immediately.

Use as a spread in sandwiches, or wraps, on toast, or as a dip with lunch.  either wasy hope you like it! 

Recipe notes:  If you find it is a little thick add some more lime juice, if a little thin, more chickpeas.

I also like adding half a Garlic glove to spice it up a bit on occassions.
