Such an easy recipe as all you do is throw everything in the blender. You can blend until smooth or a little chunky, which I actually like. Gives a bit of bite to the curry.

If you are looking for Vegan reddy made paste - I cane recommend the Red Curry Thai Paste from Thai Taste brand. available in most supermarkets.RECIPE NOTES:
Add a little water or lemon/lime juice, if things do not move well in the blender.
Fine to swap out things such as for green chillies instead of red if you do not like it too hot. Also swap lemons for limes and I also swap around the herbs sometimes depending on what I have so Parsley works well or even Basil.
If you cannot find fresh lemongrass - they often have a dried version in the spices section of your supermarket in the little glass jars with the ground ginger etc.
